I love love love clone recipes. All the joys of your favourite restaurant foods in the privacy of your own home! Tonight I made my favourite soup form Olive Garden, Chicken and Gnocchi soup. Here is the recipe with my tweaks (I omitted onions because I don't like them)
1 cup of chicken breast cooked and diced (I used canned chicken)
4 tablespoons of butter
4 tablespoons of flour
1 quart of half and half
1 1/4 ounce of chicken broth
2 minced garlic cloves
1 cup of carrots finely shredded
1 cup of spinach coarsely chopped
1 tablespoon of olive oil
1/2 teaspoon of thyme
1/2 teaspoon of parsley
1 pound of potato gnocchi
parmasean cheese
Saute garlic in butter and olive oil. Add flour and make a roux (roux =What is a roux?). Let the butter and flour mixture cook about 1 minute before adding half and half. Cook gnocchi according to the package directions. Into the roux add carrots and chicken. Once mixture becomes thick, add the chicken broth. Once mixture thickens again, add gnocchi, spinach and seasoning. Simmer until warm and enjoy!
